
Ingredients:
2 large chicken breasts
150g fine breadcrumbs or panko breadcrumbs
2 eggs beaten
2 cups of all purpose flour
3 tbsp frying oil (I used corn oil)
Serves: 10 – 12
Prep time: 10 minutes
Cooking time: 7 minutes
Method:
Step. 1: Cut the chicken breasts into small chunks. Put the flour in a bowl, the beaten eggs in a separate bowl and the breadcrumbs in a separate bowl.
Step. 2: Dip each chunk in the flour, then the egg and then in the breadcrumbs. Make sure that at you dip it well in each bowl.
Step. 3: Heat the oil a shallow, non stick frying pan on a medium to high heat. Add the chunks in slowly in batches and let them cook on each side for 4-5 minutes until golden brown on each sides. Carefully take them out of the frying pan and let them cool to the side.
Optional: honey mustard sauce
1 tbsp honey
1 tbsp mustard
1 tbsp mayonaise
Mix all three ingredients together until smooth and thick.
