This is a budget friendly recipe that you can make at home.
If you have holiday blues of Greece, then you would definitely appreciate this recipe.


Ingredients:
1 large spring onion
7 small courgettes
150g of feta cheese
2 tbsp of dried mint
3 tbsp of fresh dill
Salt
Pepper
2 eggs
80g of all purpose flour
1 tbsp of dried basil
1 tsp of lemon or lime zest
1 tbsp of ground cumin
Optional: Lemon wedges to serve with
Ingredients for tzatziki:
5 tbsp of Greek yoghurt
1 small cucumber
1 tbsp of fresh dill
5 cloves of garlic
2-3 tbsps of olive oil
Salt
Pepper
Prep time: 15 minutes
Cooking time: 1 hour
Serves: 7
Method:
Step. 1: Wash and grate the courgettes. Place the grated courgettes into a table cloth with a pinch of salt and then squeeze out the juices from the courgettes. Once you have squeezed the juices out, remove the cloth and leave the grated courgettes to the side in a large bowl.
Step. 2: In the large bowl where the courgettes are, add all of the herbs and spices, as well as the chopped spring onion, chopped dill and two eggs. Mix all the ingredients together, then slowly add the flour into the mixture and continue mixing.
Step. 3: Leave the mixture in the bowl and cover with aluminium foil or cling film. Leave it in the fridge for 30 minutes before frying.
Step. 4: Meanwhile, for the tzatziki dip, wash and grate the cucumber. Once you have grated the cucumber, add it into a cloth with a pinch of salt and squeeze out the juices. Then remove the cloth and leave the grated cucumber in a bowl.
Step. 5: Peel the outer layer of the garlic cloves and grate the garlic into the same bowl as the cucumber. Then add the chopped dill, yoghurt, salt, pepper, olive oil and mix well. Leave it in the fridge until ready to serve.
Step. 6: Take the courgette fritter mixture out of the fridge and check if the mixture is too wet or not. If it is, add more flour and keep on mixing until the courgette mix is wet but firm enough in your hand to be rolled into a ball.
Step. 7: Heat up a non stick frying pan with olive oil for shallow frying. Put it on a medium to hight heat. Grab the courgette mix and roll it into balls and then add it to the frying pan. Cook on both sides for 5-7 minutes, or until it is golden brown.
Step. 8: Use a spatula to transfer the fritters and let them cool on a plate. Once ready, serve with lemon wedges and the fresh tzatziki.
