Ingredients:
350g dried black eyed peas (soaked in water for 8 hours)
1 can of tuna
1 large tomato
1 small cucumber
A handful of fresh parsley
1 medium sized onion
Salt
Pepper
Olive oil
2-3 lemons
Prep time: 50 minutes
Cooking time: 60 minutes
Serves: 8 people
Method:
Step. 1: Wash and drain the beans from the soaked water. Boil the beans until they are soft. Drain and leave to cool.
Step. 2: Chop the tomato, cucumber, onion, and parsley into small chunky pieces and mix with the beans. Add the canned tuna, salt, pepper, olive oil and lemons. Keep it in the fridge for it to stay cool and cold.
