Easy Recipe: Tortellini Pasta with a Spinach and Mushroom Cream Sauce

1 packet of tortellini pasta

200ml light double cream

150g baby spinach or frozen spinach

150g fresh button mushrooms

1 cube vegetable stock



1 tbsp dried thyme

1 tbsp olive oil

2 cloves of garlic

Prep time: 5 minutes

Cooking time: 20 minutes

Serves: 4


Step. 1: Heat the pasta according to its cooking instructions. Meanwhile, heat the olive oil on a low – medium heat in a frying pan.

Step. 2: Wash the mushrooms and dice them into small pieces. Cut the garlic into small pieces and wash the Spinach.

Step. 3: Add the garlic and mushrooms in the frying pan and let it saute for 5 minutes. Then add the Spinach and cook for a further 2 minutes. Add the vegetable stock cube and spices into the pan and let it cook for 5 minutes.

Step. 4: Add the double cream into the frying pan and let it cook for 5 minutes more on a low heat. Once it is ready, take it off the heat and mix the sauce well with the tortellini pasta.
