Greek recipe: Arakas Laderos

This healthy, Greek vegetarian dish is very easy to make and can be enjoyed as a midweek meal.

Prep time: 15 minutes        Cooking time: 45-60 minutes       Serves: 6 people


1 yellow onion finely chopped

1 packet of fresh or frozen peas

500g of potatoes cut into large cubes

500g of carrots cut into small chunks

2 cartons of passata

1 cup of water

1/4 cup of olive oil

1/2 cup of fresh dill finely chopped

salt and pepper for tasting

Serve on the side:

1 block of feta cheese

Fresh crusty bread

Step 1. Heat up the pot with some olive oil at the bottom. Add in the onions  and let it cook on a medium heat until translucent, then add the peas. Mix them together and cook for 5-10 minutes.

Step 2. Add the potatoes, carrots, dill, passata, water and the rest of the olive oil in and mix well together. Season with salt and pepper. Let it all simmer on a low heat for 45-60 minutes, stirring occasionally and continue to season it with salt and pepper if needed. Once it is ready, serve it with some feta cheese and crusty bread. Enjoy.

Tip: If you want to know whether it is ready or not, gently prick a potato with a fork. If it is soft, it will be ready. Also whilst stirring, try a bit of the sauce in order to see whether it needs more seasoning or not.
