This recipe was inspired by the very few things I had left over in my house. As a result, it turned out to be something truly scrumptious and on the plus side, healthy too.
Prep time: 5 minutes Cooking time: 15 minutes Serves: 4
Ingredients:
1 packet of spaghetti (or any pasta to your likings)
1 clove of garlic chopped
1/2 a big yellow onion chopped
1 tin of sardines
1 tin of anchovies
1 packet of cherry tomatoes
1/2 a lemon
4 tablespoons of balsamic vinegar
4 tablespoons of olive oil
Salt and pepper to taste
For garnish (optional):
Fresh parsley
Crumbled feta cheese
Method:
Step 1. Boil the pasta according to its instructions. In the meanwhile, heat a teaspoon of olive oil in the pan and add the onion and garlic. Let it cook for 3 minutes until it is fragrant.
Step 2. Wash and chop the cherry tomatoes and then add them to the pan. Let them cook for 5 minutes and then add the balsamic vinegar.
Step 3. Drain the sardines and anchovies. Once the liquids have slightly reduced in the pan, add the sardines and anchovies, season with salt and pepper to your likings.
Step 4. Let it all sizzle for 5-7 minutes. When the pasta is boiled, drain the pasta and then place it back into the pot. Once the sauce in the pan is complete, add it to the pot with the pasta. Squeeze the lemon and drizzle the remainder of the olive oil in the pot. Mix it all up together and serve with the garnish of fresh parsley and crumbled feta cheese on top. Enjoy.
