Serves 2 – Prep: 10 minutes – Cooking time: 30 minutes

2 lamb hearts

1 red pepper

1 romaine lettuce

2 garlic cloves

1 red onion

1 cup of French camargue rice

3 tbsp sweet chilli sauce

1 splash of soy sauce

1 tsp oil

salt and pepper

Step 1. Boil a small pot of water. Once the water is boiled add the rice and let it cook for 25-30 minutes. In the meanwhile, chop the garlic and onions into small pieces.

Step 2. Chop the lamb hearts into small pieces. Add oil into the frying pan and once it is heated, throw in the garlic, onion and lamb hearts. Make sure that you check on the rice, by stirring it on occasions.

Step 3. Chop the red pepper and lettuce into small pieces and then add it into the frying pan. There will be juices coming out of the lamb heart, therefore you should let it simmer on a low heat until the lamb hearts turn brown and the juices are cooked through.

Step 4. Once the lamb hearts have browned, the lettuce has turned dark green and the juices have evaporated add the sweet chilli sauce, soy sauce, salt and pepper and stir through so everything is covered in the sauces. Let it cook for two more minutes and then take it off the heat.

Step 5. Once the rice is cooked, drain the rice. Place the rice on your plate first, then add the stir fry on top. Enjoy.
